Featured Chef: Executive Chef Victor Palma
This year A Taste of Hilo chose Executive Chef Victor Palma of the Kona Village, A Rosewood Resort as our featured chef who will be specially curating a Braised Short Rib with locally raised Big Island Beef. Chef Victor recognizes the parallels between his Mexican roots and Hawai’i’s culture of genuine hospitality, culinary traditions, and the human connections that are formed through food. From the very start of his new role at Kona Village, Chef Victor has immersed himself in Hawai’i’s rich culinary culture, cultivating relationships with local purveyors, farmers, and fellow chefs. Nearly 70% of all ingredients used at the restaurants on the resort’s site are supplied from Hawaii Island’s local farmers and fishermen. For this is also the reason we chose Chef Victor Palma to further highlight the partnerships and support of our local ranchers, farmers, and fishermen. Chef Victor aims to express Hawaii’s food heritage in an authentic way while incorporating his unique approach to dining.
